- Grows best during the coolest months. Quick maturing. Harvest entire plant or by removing outer leaves. New Zealand spinach and Malabar spinach, although not true spinach, grow well during warm months in Florida. Plant New Zealand Spinach or Swiss Chard for summer greens.
