Celery comes in a variety of colors from sheer white to vibrant gold to rich red and deep green. It is high in potassium and very low in calories. All parts – the stalk, leaves, and seeds are edible. Buy Florida celery from December through May. Look for stalks that look crisp and snap easily; with the leaves attached. Store it in the crisper section of the refrigerator in a plastic bag for up to one week. Enjoy a fresh, crunchy stalk – (with or without pimento cheese, peanut butter, or almond butter!). Or dice it and toss it into soups, salads and stir-fry recipes. It pairs well with lettuce, egg salad, soups, stocks, dill, rosemary and sage.
