Cucumbers are very low in calories - a whole one is only 45 calories. They are an excellent source of vitamin K and a good source of vitamin C and potassium. Cucumbers come in a wide variety of colors (green, yellow, and white); shapes (short, slightly oval, or round); and textures (smooth and thin or thick and rough). Florida is the number one producer of cucumbers in the US. Fresh Florida cucumbers are available fall (October-December) and spring (March-May). Two main types are grown: slicers for fresh consumption, and picklers for processing into pickles. They can be enjoyed sliced or chopped in salads, smoothies, wraps, sandwiches, dips, and cold sauces and soups. Add them at the last moment as they will release water. When shopping, look for firm, unblemished, dark green fruits. Store in the refrigerator, unwashed in a perforated plastic bag or crisper drawer so they can breathe. Never freeze cucumbers.
