Most folks don’t realize that you can enjoy fresh Florida corn from October through June - nine months of the year! Corn is low-fat, whole grain that contains fiber, and is free of sodium and cholesterol. Available as yellow, white, or bi-colored, you can cream corn, make it into chowder, boil or roast it, add it to salads, or mix it with other veggies. Buy corn with the green-colored husks still attached. The cobs should feel and look moist and plump, with the kernels inside fat and shiny. Easily remove kernels from the cob by standing the corn on end on a cutting board and cut down the cob with a sharp knife. Boil or steam corn for 5-7 minutes in unsalted water or try roasting and grilling for a smoky flavor.
